Learn how to make restaurant style Stuffed Tomato Potato Sabzi - a simple vegetarian main course recipe from our chef Archana on Ruchkar Mejwani. <br /> <br />Ingredients: <br /> <br />7 Tomatoes <br />For Stuffing <br />4-5 Potatoes, Boiled & Mashed <br />Coriander Leaves <br />1/2 tsp Coriander Seeds Powder <br />1 tsp Mix Masala <br />1 tsp Kolhapuri Masala <br />Salt to taste <br />2 tbsp Oil <br /> <br />For Gravy <br />2 tbsp Oil <br />Coriander Leaves <br />Paste of 2 Onions, Scooped Tomatoes, 7-8 Garlic, 1/2 inch Ginger <br />1 tbsp Mix Masala <br />1 tbsp Kolhapuri Masala <br />1 tbsp Coriander Seeds Powder <br />Salt to taste <br />Water <br /> <br />Method: <br /> <br />- First chop both the ends of the tomatoes. Scoop out the inside mixture from the tomatoes. Similarly keep doing this for all the tomatoes. <br />- To make the stuffing in a bowl add boiled & mashed potatoes. <br />- Then add coriander leaves, mix masala, kolhapuri masala, coriander seeds powder and salt. Mix everything well. <br />- Stuff this potato mixture in all the tomatoes. <br />- In a pan heat some oil. Place the stuffed tomatoes on the oil. <br />- Cover it and let the tomatoes cook for 10 minutes. <br />- To make the gravy, heat some oil in a pan. <br />- Add coriander leaves. <br />- Then add onion-tomato-ginger garlic paste. Saute this paste for a minute. <br />- Add mix masala, kolhapuri masala, salt & coriander seeds powder. Mix well. <br />- Add little water and mix well. Cover it with a lid and let the gravy cook for 10 minutes. <br />- Pour this gravy on the cook tomatoes. <br />- Cover it again and let everything simmer for sometime. <br />- Garnish it with coriander leaves. <br />- Stuffed tomato potato sabzi is ready to be served.
